What we were thinking
We wanted a chocolate bar that actually tasted like a mocha latte the way you’d order it in a great coffee shop.
Extremely milky. Lightly sweet. Smooth coffee depth. Less “coffee flavored chocolate,” more actual latte energy.
How we did it
We pushed the milk content way up, kept the sugar well in check, and used just enough Belizean cacao to hold everything together without taking over the creaminess of the milk.
The Peruvian espresso is rich, slightly nutty, and works beautifully with the deeper molasses notes in our sugar. The milk keeps everything soft, and the cacao mostly knows its role and behaves itself for once.
The TL;DR
Mocha latte made café style. Heavy on the milk. Smooth espresso.
Creamy, mellow, lightly sweet, and probably the closest thing we’ve made to drinking a café order in bar form.
