66% Kumquat Old Fashioned

This seasonal bar combines the smoothness of our Peruvian cacao with the bright, tangy flavors of locally grown Florida kumquats from Dade City. The cacao comes from Piura, Peru, and has almost no bitterness, thanks to the unique desert region where it’s grown. The result is a chocolate with a natural cherry-like undertone and a clean, bright profile.

We’ve infused the beans with Florida Straight Bourbon and Aromatic Bitters, then added fresh kumquats to bring a citrusy punch. It’s our take on an Old Fashioned cocktail in chocolate form—where the cacao offers a cherry note, and the kumquats provide the citrusy kick. A unique, flavorful bar perfect for the season.
